Give the meat or fish a quick rubdown with marinade or rub before cooking and let it sit and absorb the flavors.<br /><br />*Marinate foods in the refrigerator, not on the kitchen counter (unless for 30 minutes or less). <br /><br />*Use a nonmetal container.<br /><br />*The same brush used for brushing marinades on raw meat should not be used on cooked meat.
